Jim made 3 pies from The Perfect Pie by America's Test Kitchen, apple, pecan, and pumpkin. This book is fantastic and full of all the information you need to make wonderful pies. We checked the book out at the library and liked it so much we had to have our own copy. One of the things I like the most is how they explain the processes and why this one is better than others. America's test kitchen very rarely disappoints and this is a winner. I especially liked the section on regional pies. Can take novice pie cooks (me) to new avenues of exploration.
