راجع به ساخت پیتزا بود. مدل ساخت خمیر و تخمیرش و دما و مواد مورد نیاز و چطور میشه که اون‌طوری میشه.
الان که کامل نخوندمش قاعدتن چون حس کردم باید برم وسیله بگیرم بیام درست کنم مدلی که میگه رو.
ولی کتاب به ظاهر خوبی بود تو این زمینه.
فعلا میذارمش تو ان‌هولد تا برگردم پرکتیکال پیش برم باهاش.

I put this on hold when I was looking into books about making sourdough and this was mentioned. It's very dense and informative, and covers a lot of the same ground as The Perfect Loaf. But it's a little more challenging, I think in part because it's written by someone who runs a bakery, and they've adapted bakery process for the home kitchen. Whereas in The Perfect Loaf, the processes were developed for and in a home kitchen. I prefer the latter, as there's already quite a lot of detail to learn. This might be a good book to try as a next step.

I’m a beginning bread baker, so I found the detailed instructions in this book useful. I’m still getting the hang of his levain breads — I’m not used to working with wet dough. But his Saturday white bread is a good basic bread that was great for sandwiches and for pizza dough. Hoping with enough practice I can master some of these loaves.

Lovelovelove books that combine stories, history, information, and recipes (Jennifer McLagan is another favourite). This one is exceptional. Read the whole thing, and have started amassing the stuff I need to step up my bread-making game. (My name is Baker, after all...)

I dunno about you, but it's hard to express the wonderful feeling of making and sharing great bread, and this book communicates that in spades. And, y'know, makes you really hungry. :)

A book on not just the how but the why behind the various steps and elements of bread baking, delivered with a personable voice that reads like a conversation. While you are welcome to follow each recipe exactly (and encouraged to do so while you build some familiarity and experience), he also gives you tips on how to adjust bread baking to suit your life and your tastes. I’ve only baked one loaf from this book so far but it was far and away the best loaf I’ve ever made. Absolutely looking forward to baking my way through every loaf.
