I have been trying to reduce the amount of meat I eat, and coming up with substitutions and recipes wasn’t always easy. Some recipes only make it very difficult and overwhelming. But I didn’t feel this way with the book.

Easy Vegan is packed with easy-to-follow recipes that can help anyone make the change, or just to introduce more vegan food in their diets.

I’m specially grateful for the information given at the beginning, about portions and food substitutions. I think it’s very valuable information that it isn’t always given. It made me feel more confident about eating the right amount of protein I need, after removing meat from my diet.

I think this book not only gives 100+ recipes to try, but also a bit of knowledge and understanding on the vegan diet.

There is a lot to like about Easy Vegan: 140 Delicious Recipes from Everyday to Gourmet. It's great for new vegans because it defines a vegan diet and gives advice on staples to stock your pantry as well as substitutions for animal-derived ingredients. Additionally, it includes recipes for making your own vegan butter, milk, stock, and more. The book incorporates nutrition information and charts that tell which vegan foods include key nutrients along with the protein content of many plant-based foods. Then there's the recipes. There are so many unique vegan recipes that I haven't seen anywhere else. I'll definitely be trying many of them!

Easy Vegan really is quite easy. 

I found this quite informative on the basics of vegan foods, how to begin, the different nutrients needed, how to do simple swaps, and some very easy, simple, delicious recipes.
