The rancher's wife, tired of baking biscuits, decides to bake a gingerbread cowboy instead. But just as she and the rancher were ready to enjoy him, he jumos up and runs away. He outwits and escapes cattle and the roadrunner and even hungry cowboys. But what happens when the gingerbread cowboy encounters a sleeping coyote?

Cute take on the traditional gingerbread man story. Nothing about it was extra-special, but it was still nice. Amusing story the little ones will probably enjoy.

We used this in a unit on the Gingerbread man stories where we compared the themes, refrains, and whatnot of the books we read. It's a fun retelling, to be sure! The kids liked it a lot.

Love how this classic is set in the Wild West. Would be a great way to introduce Parody. Good writing challenge, too.
