Perfect for the new chef, this cookbook keeps me from calling my mom every time I have a question about cuts of meat, cleaning techniques, or the specifics of fish. Even on its own, the reference sections of this book have been extremely useful to me, not to mention the huge volume of recipes that are good for almost any occasion.
