What do you do when your family member gets diagnosed with an overwhelming health issue? Run out and get a book that could help. What did Dick, the author, do when he was diagnosed? Wrote a bunch of books to help people like himself. The author is not a doctor, dietitian, nutritionist, or professional chef. He's a guy in Maryland, near my neck of the woods. Some of the recipes are beginner level, and some are a little more advanced. (There's one that includes sausage as an ingredient, for example, and the instructions just say, "cook the sausage," but do not say how. Only a few are like this though.) Most are stovetop or oven, but some are grill or slow-cooker. (Though the person I bought this feels that the author doesn't get the Crockpot concept of tossing everything in there with no other steps besides returning a few hours later.) I was impressed that there was an Amish dish included. And a different take on salmon soup that interests me. (It wasn't something I grew up with, but something someone made for me a few times. Canned salmon. Such an unusual ingredient for a book like this.) Everything in the book is also low-sodium or sodium-free. There's a great introduction in the book that details the reasons. The family member I got this for already has a dozen pages flagged with recipes to try-- and this is not a person who cooks or enjoys being in the kitchen, so consider that a high praise by itself.

- the author is obsessed with low sodium everything, and i dont need or want low sodium. he even lists even low sodium canned tomatoes and low sodium mayonnaise in his recipies. which makes me wonder if any of these recipes are going to have any flavor or will they all be boring and bland.
- the entire bread section was a waste because all the cooking instructions said "place ingredients in bread machine in order specified by manufacturer. process on white/wheat bread cycle". i have no bread machine.
- despite those two negatives, i did find some interesting looking recipes in this one. spinach pesto sauce, broccoli pesto, apple pecan log (no peanut butter or raisins yay!), green onion dip (with cottage cheese), white bean dip, three cheese quiche (with cottage cheese), apple and sausage quiche, breakfast pocket (eggs in pita), beans and barley (slow cooker), vegetable chowder, apple and barley stew, grilled hawaiian fish fillets, italian baked fish (with capers and anchovy), chicken breasts stuffed with cheese, chicken breast with balsamic sauce, chicken piccata, chicken breasts baked in creamy herb sauce, vidalia onion chicken casserole, soy and ginger flank steak, deviled steak, beef and barley casserole, pineapple stuffed pork chops, zucchini stuffed pork chops, barbecued pork roast, ginger orange pork chops, cranberry pork roast, glazed pork roast, sausage and lentil soup, marinated green beans, dilled carrots, asian chicken pasta salad, quick summer squash, broccoli with lemon sauce, roasted vegetables, bulgur and vegetables, individual mexican quiche, taco quiche, glazed chicken and vegetables, chicken and snow peas, pineapple rice, orange cookies, banana cake.
-i ended up using his recipes as a base to search the internet for non-low-sodium versions. most of his recipes seem to be straight off the internet, he just changed them to be low sodium.
