No le recomiendo a nadie que no esté interesado en el aspecto científico de la #nutrición o que genuinamente adore hacer números y entender todo a detalle, leer este tipo de libros a fondo.

Nos dice (básicamente) lo que ya sabemos (pero es tan difícil poner en práctica). Que lo mejor es lo menos procesado, lo más natural y lo menos empacado. Que si re-educamos a la intuición el cuerpo sabe qué y cuanto comer.

NO apoyo la idea de preocuparse por el contenido de fructosa en una fruta, pero sí por aclarar que no es lo mismo la fruta que la mermelada; de nuevo: mientras más natural mejor.


🇳🇿 I do not recommend it to anyone that is not interested in the scientific aspect of nutrition or that genuinely loves to do numbers and understand everything thoroughly.

The facts are interesting as per usual and the topic of sugar and it’s reality regarding health, mind blowing.

Science tells us (basically) what we already know (but it is so difficult to put into practice). That the best is the least processed, the most natural and the least packed. That if we re-educate our intuition the body knows what and how much to eat.

I do not support the idea of ​​worrying about the content of fructose in a fruit, but fruit is not the same as the jam; again: the simpler the better.

I believe the book goes into details that are not necessary to know for a healthier life and may just support obsessive behaviours. But again, if you are looking for details and numbers; check it out.

An interesting look at the biology of how your body processes sugar. At times it's a little scary, and at others it's hard to believe (if only because you don't want to) but it does really makes you stop and think. As a result, I have taken some of the author's advise and cut back on my sugar intake and genuinely do feel better, more active and think I see better results from training. So, hopefully, this has been good advise and not just a placebo effect.

Whether you choose to believe everything you read, or take it with a pinch of salt, it is a genuinely eye opening look at the historical context for the addition of sugar (specifically fructose) to our foods and the overall statistics for the increase in diseases such as diabetes and heart disease.

Gillespie doesn't pretend to be anything more than a man who has read a lot of medical research on the subject. Whilst I'm sure someone with a medical degree could have explained some details much better, this book benefits from being presented in lay terms by a layman.

First note! This was written in 2008 and has science based on information available at that time. Second, I'm giving this 5 stars because of how well Gillespie laid out complex processes about how glucose and fructose are (or are not) processed. He doesn't focus on the impacts of other highly processed foods like flour, etc and he doesn't claim to be anything other than what he is...a curious person who learned biochemistry on his own in a quest to understand how high volumes of fructose hurts our bodies.

I learned a ton about how the liver, pancreas, and gallbladder work, and I'm better off with this knowledge. It's given me the kind of knowledge and language I need to do more research on my own, which is important in any nutrition journey. I highly recommend this as it's not a slog, and is very informative.

It would be cool, if Gillespie was inclined, to get a revision of this book with the new research around ketones and ketosis as well as any other new relevant findings.

Run, don't walk to read this book. Steal it if you must. Or temporarily borrow, give it back so others can read it too. Thank me later.

Qutting sugar isn't easy, but reading this will help. Fructose turns to fat. So quit nut and seed oils (canola, sunflower etc and switch to (fruit ones) coconut and olive), quit sugar and we'll live longer and healthier lives. It's that simple. Fats and proteins are fine, stop worrying about animal fats (just be wary of too much sulfites though and other preserving agents).

Oh my god! Incredible book. A lot of the biology and biochemistry stuff went over my head but I am so glad I stuck with it.

This book scared the bejesus out of me! What if he's right and the obesity/diabetes type II/cancer epidemics ARE caused by fructose?! Fructose combined with glucose equals sucrose, or table sugar/honey/HFCS/agave etc. I am dying to call all the people I love (or frankly even like just a little bit) and demand that they Stop. Drinking. Soda. NOW. That crap is going to kill you in one way or another.

Basically (and I'm no science genius, so this is super simplified) he outlines how fructose behaves in the human body. It does not trigger the hormone leptin that tells you that you're full and to stop eating/drinking. When you eat an apple, your body will react to the carbs and fiber and tell you to stop. But you can drink gallons of Coke all day long and never feel full. You'll likely eat just as much food as you would without the gazillion liquid calories you're ingesting. AND THAT ISN'T EVEN THE BAD PART. Fructose also does not trigger insulin, meaning it does not get processed as other sugars. Instead, it gets turned into fatty acids that bumble around your bloodstream clogging things up. Turns out 'fat-free' is not going to save you from heart attacks or strokes after all.

I am considering a trial of no added sugars. I don't drink soda, so that part will be easy, but almost all processed foods in this country have added sugar or HFCS and I do have a bit of a sweet tooth...

Dated and not as nutritionally sound as it should be considering the numerous editions published by this point. I gave it a 3 because it's main premise, that sugar is poison, is spot on. However, the delineation between fructose and glucose, as well as advocating for processed foods proven to harm - this is problematic.
