At the start of volume 3, Touka and Kaneki go in disguise to the Commission of Counter Ghoul (CCG) with the intention of throwing the Doves who have been sniffing around their ward off of their scent. We learn about RC cells, which ghouls have, identifying them from humans, and devices that have been made to scan for these cells.
Up until this point, we have gotten glimpses of characters fighting one another, using their respective weapons to maim or kill. But for the first time, we get a full battle scene between ghouls and doves, and it is brutal and fascinating. These characters have such anger and hatred (and heart) and it really shines through in the art style. Not to mention, the two fights are so opposite in execution, dialogue, and outcome, and it is really interesting to see.
As another loss is felt throughout the final chapters, we see more humanity on both sides, as well as more evil. Kaneki desperately wants to be a bridge between the two worlds, and he struggles with all his feelings despite becoming a much better opponent, physically.
Side note, I really do love his mask.
