I acknowledge this is a cookbook, but there's quite a bit written about the inspiring work of the World Central Kitchen as led by Chef Andres. In between recipes (based on the food they've served during various responses) is thoughtful discussion about the importance for including community during humanitarian response and the need to incorporate local input and cultural competency. (I have not yet made any of the recipes, and as a vegetarian that cuts out quite a few, but they look tasty and nourishing.)
