The Complete Joy of Homebrewing
by Charles Papazian
Again, cheating a little. I have referenced this book more in the past year than any other books I own, and I probably won't stop. This thing is indispensable, but when you have SO MUCH information, the book itself can turn into a slog or a treasure hunt. I have something highlighted on nearly every page, and the index tends to point to three or four different spots for each topic, some of which are just an off-hand mention. This book could use better organization, more help with all-grain brewing and less RELAX! DON'T WORRY! HAVE A HOMEBREW! I am relaxed, Charlie--I have had like five so far--I just want to find out when to add lactose to my stout. I'm using the second edition, so maybe my gripes here have been fixed.
