This is a fabulous cookbook!

It starts out by explaining a little bit about following a vegan diet, how vegans get nutrients, and the various benefits to be gained by eating a vegan diet. Even with all of this, it never comes off as preachy or pushing a plant-based lifestyle, although if you're reading this type of cookbook, you're probably either considering it or already eating this way.

The recipes are broken down into sections, including appetizers, sauces, and dips; breakfast; salads and salad dressings; soups; vegetables, stir-fries, and sides; rice and grains; classic pastas; miscellaneous mains; tofu; seitan, TVP (textured vegetable protein), and tempeh; and delicious desserts. Each of the recipes include nutritional information, and there is a section at the back that provides conversion between US and metric.

Each of the recipes includes a little blurb at the beginning, providing a little bit of information - either about the recipe itself, substitutions that can be made, or what to serve it with. There are stunning pictures included for many of the recipes that had my mouth watering. I bookmarked so many recipes, and I already know that I will be returning to this book time and again.

Something that especially appealed to me is that the recipes include ingredients that I already have on hand and don't have to visit special stores for. It's nice to be able to just flip to any page and be able to make the recipe without having to hunt down obscure ingredients. Another thing I liked is that it doesn't involve complicated cooking techniques or equipment. I know my way around the kitchen, but I'm not comfortable with difficult recipes, and I'm fairly certain that I could prepare the vast majority of the recipes in this book without difficulty. I'd highly recommend this book no matter what your skill level is.
