Bittman's writing style makes the science behind the typical American diet accessible. He's not preachy about altering your eating habits. Like him, my desire to change what foods I'm eating is born of necessity since I'm pre-diabetic and lactose intolerant--two recent discoveries concerning the state of my physical health. His recipes use ingredients readily available to me. If are in the processing of changing your diet, then start with this book first.
