Some very tasty looking recipes, especially if you eat a lot of cheese, but she did a poor job explaining the wide range of vegetarian & vegan sources of umami.  And some of the ones she covers are inaccurate in quantities of umami or WHY and HOW that methodology is bringing out umami free amino acids.  I really like her writing style, just super wish there were more science-y specifics available somewhere in this book.  Or... that I at least felt confident she'd understood it better herself before writing the book.
