Sarah, Plain and Tall by Patricia MacLachlan

It's an actual crime that I was never exposed to this series as a child. This book is exactly what great literature for children looks like. I feel like modern children's books tend to be so fast paced and action packed because authors are afraid to lose the attention of children who are used to a world that moves a million miles a minute. Books like these teach children to slow down and appreciate the sights, smells, and sounds around them.
