Before refrigeration, dried salt fish was a common cheap food eaten both in London and by enslaved people in the British Caribbean, whose cuisine incorporated West African influences. The ingredients here aren't much like the modern Jamaican dish as ackee, plantain, and even peppers and tomatoes weren't normally available in England back then. I imagined Charlotte's mum making her own version with
