Great weeknight meal recipes and generally pretty pantry friendly too. Very nice photos throughout the book. The amount of nuts and seeds in the recipes might break your budget, but nothing seems to advanced or difficult for the home cook.
I really appreciate how you will find protein in most of the dishes. A lot of vegan cookbooks can skimp on the protein, by just throwing mushrooms where a proper protein should be.
I really recommend the 'Protein Power Rainbow Quiona Salad' on page 99.
