Lots of great explanations: what various spices taste like and how they're best used, how these recipes contrast with more "traditional" Indian cooking, occasions when you might like to make a certain dish and why. Nice anecdotes and photos for nearly all recipes. I feel confident that if I purchase a few spices unfamiliar to me, I've got the knowledge I need to experiment with them and use them up, thanks to this book. Excited to cook up some Indian-ish food.
