If you want to become a better cook/eater, you HAVE to read this book.

This book has transformed the way I approach cooking, and even eating. What was previously an abstract experience of guessing with my senses have become clarified notions on why we do certain things in the kitchen.

It gives you clearly defined and easily memorable guidelines for cooking, and above all else, it explains WHY you're doing it. So many questions that I didn't know I had were answered by this book.

I now have a substantially heightened awareness of how my ingredients are interacting eachother, and why so many of my meals have failed.
