Key moments for me:

Shallan and Adolin
solving the mystery of who murdered Sadeas (Adolin killed him the end of book 2)

Shallan going absolutely crazy
and manifesting two better personalities (Veil & Radiant)

Dalinar's backstory was sufficiently emotionally devastating
(shshsh being Evi, the fire, the alcoholism etc)

Kaladin getting emotional when
Elhokar died
was what made me stop reading for 15 months. I just didn't want to deal with the whining, but it actually wasn't that bad. He just focused on the next task.

Adolin and Pattern talking was funny af.

*Kaladin, glowing on the boat with Shallan staring in awe*
Adolin sighed and made his way up onto the high deck. Seemed they weren't forbidden here any longer. He joined Pattern, who had come up another set of steps, and was humming happily to himself.
"Kind of hard to compete with that, " Adolin noted.
"Mmm," Pattern said.
"You know, I've never really felt like this before? It's not just Kaladin, it's all of this. And what's happening to us. " He shook his head. "We are certainly an odd bunch. "
"Yes. Seven people. Odd." page 1070

"We'll be fine. " Adolin glanced at Pattern, Syl, and the spren of his sword
(Maya)
. "Right, guys?"
"Mmmm," Pattern said. "I do not like being stabbed."
"Wise words, friend. Wise words. " page 1156

Szeth and Nightblood (sword-nimi) were the funniest dynamic right up until Lift, Szeth and Nightblood had multiple conversations. Szeth deciding to be a Knight Radiant and follow Dalinar was comical.

"No," Szeth said. "I am not good at being a person. It is... a failing of mine. " page 1207

Teft becoming a knight Radiant was nice, I would've liked that to be more of a focus. Lopen at the very end saying the words casually was funny af, but also why did we nearly end the book with a joke? I'll miss seeing Moash since I'm not continuing the series.
