I have no idea who said "write what you know" or why, but if it were me I would say "because otherwise you're going to piss off the people who DO know." The ocean in Maine is FRIGID in June. June is not the month you say "the ocean is cold *even* in June" because it doesn't warm up until July. Making potato salad right before you serve it is a mistake. Making mustard takes thirty seconds. Hollandaise sauce is not something an accomplished cook has trouble with, and no one who bakes more than casually thinks "the back of the chocolate chip cookie bag" is the best recipe for chocolate chip cookies. Also, why would you scoop out puff pastry to add filling? Why not just flatten it? It doesn't become dense, and keeps the integrity of the bottom. ANYWAY. This book was fine. But I'm not convinced the author has ever been to Maine or baked from scratch.
