I’ve read the original several times, and I think this is a pretty faithful adaptation. There were a couple unimportant bits that were taken out or changed, such as Bouc’s and the doctor’s thought processes while thinking about the solution to the crime. But in general everything was pretty much the same as the original book.
The only real point I would put against the graphic novel is that the art got a bit repetitive during questioning (and also that Bouc was eating a bagel instead of an omelet).

Regarding the stabbing of the victim: the victim is shown with blood on him, but the stab wounds are not very graphic. We are shown visuals of the murderer going through the motions of using the weapon, but not of the victim actually being stabbed.
