More than a cookbook, this is a set of guidelines for learning how to cook and how to flavor foods. I read the book cover to cover at the library, and haven't yet decided whether I want to buy a copy for future reference. The ratios for creating seasoning blends and directions for building enriched broths, braises and stews are the two most appealing aspects of this book.
