This book covers the four elements of cooking (Fire, Water, Air, and Earth) which I found a bit dubious in terms of being the best categorization, and the book didn't convince me per se. But nonetheless, each of these topics was impressively well-research, and most of my highlights include a "to read" or "to research" note. I learned quite a bit about the science of cooking, although granted I knew almost nothing before.

Did this book change how I think about my own consumption? Definitely. The attempts at some macro-social analysis fell flat (at one point the author states that the West's white rice supremacy is probably not racist because East Asian societies mirror the same preference. The racial dynamics of East Asia aren't the same as that of America, and a cultural competency reader should have easily pointed that out). But you know, can't win them all.

Parts of this book drag on a bit, but by and large it's an appropriate length for the subject matter which can be written about for thousands of pages easily. So thumbs up. Headed out to make a soffrito now.
