Gosh, this is great. Useful, entertaining, encouraging, and full of knowledge. I borrowed it, but will be buying it for reference.

I had a great time reading this. My sourdough starter is going well and the loaf I made (kneading and all) was delicious. Haven't tried making anything else yet but I may need to own a copy of this book. I don't agree with everything the author believes but I appreciate his deep enthusiasm for food experimentation.

This book makes me excited to try new food experiments. And it makes me long for a cellar. Or at least a bigger kitchen.

I found the book very interesting as it was not only informative but very engaging to read as Katz included anecdotes for each of the types of food he included in the book.

Very informative resource on fermentation as well as a meditation on illness, queerness, community and how foodways impact our health, wellness, the earth and connections.
