A book on not just the how but the why behind the various steps and elements of bread baking, delivered with a personable voice that reads like a conversation. While you are welcome to follow each recipe exactly (and encouraged to do so while you build some familiarity and experience), he also gives you tips on how to adjust bread baking to suit your life and your tastes. I’ve only baked one loaf from this book so far but it was far and away the best loaf I’ve ever made. Absolutely looking forward to baking my way through every loaf.
