So super interesting!  They do a really good job of covering many vegan & vegetarian sources of umami along with the more obvious meaty ones and have some lists of foods with their various chemical breakdowns at the back of the book which I'll be referring back to for future cooking projects, I'm sure!  I wish they'd addressed Maillard Reaction at all anywhere.
