The best Cuban cookbook I have read, by far. Although the recipes tend toward the meat oriented, as does Cuban cuisine, it is certainly authentic and represents the best Cuba has to offer. I found the extensive notes, biographies on eminent Cuban chefs, and history of food to be the best part of the book. Astounding really. Well worth reading,
