A book on not just the how but the why behind the various steps and elements of bread baking, delivered with a personable voice that reads like a conversation. While you are welcome to follow each recipe exactly (and encouraged to do so while you build some familiarity and experience), he also gives you tips on how to adjust bread baking to suit your life and your tastes. I’ve only baked one loaf from this book so far but it was far and away the best loaf I’ve ever made. Absolutely looking forward to baking my way through every loaf.

This breadmaking book as approachable, has recipes of varying complexities and compositions for beginning to expert breadmakers, and does not require you to create a sourdough starter in order to get started! Overall very good, although the author is very opinionated on the "right" way to make bread.

If you’re into Dutch oven no-knead bread, this terrific book is for you. It contains very clear instruction and has many beautiful photographs. It is also one of those cookbooks that is a pleasure to read cover to cover.

Will return to this in the future. My sourdough starter is doing great and I've been enjoying the breads I've made solely with it; I'd definitely give some of his recipes a try, including the ones that pair commercial yeast with the wild yeast. I'd picked up most of the other info he gives from other sources, but I confess I was comforted by his "bake it black" philosophy, as my loaves have come out very very dark but perfect on the insides, and the crusts have been so flavorful, but I'd been self-conscious of how dark they were. Now I'm proud!

This is a really fantastic book that goes into depth on the mechanics of bread, why each step matters, and what to look for. I’ve learned so much from reading this cover to cover, and can’t wait to dive into more of the recipes.

You know what? I read this thing like a textbook, and it transformed my sourdough skills, so I'm adding it on here. I still can't get them to taste terribly sour, but my bread changed dramatically after reading this book, especially the first few chapters.
