FINALLY! It only took me two years to finish reading this monster! (Granted, it was just sitting in the backseat of my car for about a year and a half). After I read the chapter on carbs I immediately had to come home and bake. Somehow the vegetable chapter did not have that effect on me.
It DOES have science in the title so I'm not surprised but it was a little more science and a little less entertaining than I was looking for. I read on my Kindle which didn't help. I think if I had been able to flip through/around I would have enjoyed it more.

Very informative book on all stuff cooking related.
From milk to mushrooms, bread to briskets, a pleasure to learn so much, in such breadth. This study of food explores scientific and cultural aspects. For example, the terpenes that give asafoetida its oniony, garlicky, and meaty flavor make it popular in Jainist cooking, where onions, garlic, and meat are forbidden.
My daughter and I shared this as a read=aloud over the course of over a year. We read every word, and it's not a short book, but I think it will be just as enjoyable to dip into from time to time, reading about this and that, as the fancy strikes.

You can never really finish reading this book. So important.
