Excellent! I'm already a vegan and this book still had some great tips for me. Breaking down foods into what to eat in abundance, what to eat a decent amount of, and what to avoid, is always a great refresher. Also, pre-cooking foods while making dinner was something I haven't really thought about.
But I didn't read this book for myself. My dad is starting to have issues with his knees, which in turn is making it difficult for him to exercise as much. And the knee problem started from needing to lose a few pounds. Catch-22 anyone?
While I know he won't become a vegan, mom sure would be annoyed with me, this is a great alternative. When his doctor said take pills for blood pressure, he asked why not go vegan? The doctor laughed. Really? So, the idea is there already in his head. Yay!
It's helpful for any and everyone who wants to eat healthy but not go crazy on a stupid short term, lose it quick and get it back quicker, diet. Have you heard, paleo is losing its steam?
This is about a lifestyle change. The standard American diet is terrible, obesity is running rampant in this country, and healthcare is a mess. Bittman does a great job of encouraging readers to make a permanent change, but not a sacrifice.
Even if you aren't interested in the VB6 "diet" (that word is terrible for this instance), this is still a great reference on eating well and getting the seed of a healthy lifestyle planned in your head.

Bittman recipes are solid. I really appreciate that he makes a point not to have a bunch over processed products in his vegan recipes.

Not vegan, but I like the concept of eating "healthy" (or vegan, in this case) until 6:00, and then letting yourself eat whatever you want for dinner. I think I'm going to try that with chocolate, which I have a bad habit of eating right after lunch... and for an afternoon snack...
The one criticism I did have was that Bittman's recipes seem to involve spending a lot of time in the kitchen, which your average person is probably not going to have. Like one of his meal plans called for a stir-fry lunch during the week, but didn't mention when you were going to have the time to make that if you work in an office. That sort of thing.
Otherwise, not a bad book, and I like his relaxed, more forgiving approach to "dieting" (although this doesn't really feel like a dieting book, per his intention).

It's not fair to rate this. I was a vegan for about 2 hours before I was like wait, what am I doing?
Well researched. Well written. And any recipe by Mark Bittman is delicious.
Informative only if you have absolutely no nutritional knowledge - lots of basics that I already knew. The recipes section is the best part.
Takes a bit too long to get to the recipes. On the plus side though I want to cook everything in this book, all of it. Omnomnom!
I really appreciate the idea of this book, since I prefer to eat veg but have to feed a whole family. I am eating easily three times the amount of fruits and veggies I was before I read this, and more whole grains. The recipes so far are excellent too. My only complaint is the text part was very repetitive.
A combination of scientific background/research, stuff I've already read in a previous health or wellness book, and recipes/menus. This books makes a lot of sense to me though that doesnt mean I'll follow it. I'm not a huge meat eater and never have had much of an appetite for dairy. The tough part is all the foods where milk or eggs are in trace amounts. !!! I think the bigger idea is that any change you can make,no matter how small, will have a positive impact for you and the earth. :)
