Good concept, and it sounds easy to stick with. Even if I can't do without my coffee with half and half with breakfast, the rest seems doable.
I don't normally read cookbooks all the way through, but I certainly did for this one. Mark Bittman's no-nonsense easy guide for changing your health and your lifestyle is thought provoking and not nearly so hard to put into practice as most "fad-diets" are. Basically, you follow a strict vegan diet for breakfast and lunch and for dinner you can be flexitarian and have dairy, grains, or meat. The theory being animal products in grain are not nearly as good for your health as fruits and veggie so they need to be eaten sparsely and in moderation. A little bit can be a good thing, but the crux of everyone's diet should be fruits and veggies. Besides a basic outline of the lifestyle change (not diet!), there is a guide on storing, cooking, and buying fruits, veggies, nuts, condiments, etc. Also included in the book are dozens of intriguing recipes. I haven't had time to try any yet but they certainly look yummy. Some are even simple enough for a novice like me to make!
Recommended for someone interested in changing their eating lifestyle or wanting to try out a vegan diet.

I’m interested in learning how to have a more plant-based diet and I like Bittman so waited a long time for this to come off hold. Unfortunately there was so much I didn’t like about this book that I couldn’t finish it. The first several chapters were monotonous with sweeping, repetitive information and nothing that hasn’t been promoted relentlessly for the past few years. Shopping lists - boring. Categorizing food - a generally unhealthy practice. Recipes - boring. Maybe this would be a helpful book for people who have little nutritional knowledge and rely on packaged and take-out foods.
This book was an easy read and the author had a pretty "this is common sense" tone. The premise is so simple it's kind of silly to need a whole book on it, but the recipes look worth trying.
This really could have just been condensed to a couple small chapters at the beginning of a cookbook. I'm glad I read it, but I'm gladder I didn't buy it and will wait for the companion cookbook to spend money.
I love cooking from Mark Bittman and love his practical tips for eating Vegan. I don't see myself going all vegan, but that's what makes this book great-you can follow his suggested meal plans or work it around what works for you, making veggies more of a priority than meats and definitely getting rid of over-processed food. I also love that living in Australia, there are so many great cafes where you can eat fresh and healthy!
Bittman's writing style makes the science behind the typical American diet accessible. He's not preachy about altering your eating habits. Like him, my desire to change what foods I'm eating is born of necessity since I'm pre-diabetic and lactose intolerant--two recent discoveries concerning the state of my physical health. His recipes use ingredients readily available to me. If are in the processing of changing your diet, then start with this book first.
Hmm not sure what to make of this. I'd hoped for more innovative recipes and they didn't seem to be there. Focus seemed to be on eating veg and fruit before 6 then meat after so probably not best for us as veggies.
I have no plans to become a vegan but I do continue to change my eating habits. I knew most of the information that Bittman shares but I liked how he wrote and talked about his diet. I can understand why he does the vegan before 6. I personally just try to eat more whole foods and less animal products all the time. I like how he emphasized whole foods and a well rounded diet. He also isn't too die hard which makes any sort of eating style difficult. My favorite part of the book is that about half of it is recipes. I am really excited to try them and incorporate more good foods into my diet.
A perfectly reasonable diet. The book would be great for someone new to the idea of a vegan diet but if you're familiar with the arguments in favor, the book will feel repetitive. However the VB6 diet is a good way to explore non meat cooking without giving it up entirely. I am trying to start it myself, but it is hard to give up my meat for lunch.
